So I've never used one of these before, but have seen them used.I have a lot of "show knives" that I rarely use and just keep sharp with a sharpening stick, and then I have my day-to-day workhorses. I have an AWESOME little santoku that was super dull (I'm sorry if I'm not supposed to be grinding down that kind of blade - feel free to judge me).I watched a few Youtube videos and used the lowest grit (400?). I actually mucked it up a few times, but after getting the hang of it had a MUCH better edge than was previously there. Not quite "like new" (though I imagine with a bit of practice I'll get there) but certainly sharper than she's been in years. Then I honed a bit with the 3000 I think? To finish and polish off the edge.Thing is night and day compared to how it was. Cuts tomatoes like it hasn't in ages and butterflies chicken SOoooo much easier - seriously I was cruising for a badly cut palm with how I was using it before.The set itself is really nice - the base sat firmly on my counter, the stones didn't slip in their silicone holders and it has a nice variety of grits (I think it was 400, 1000, 3000 and 8000?). Really enough to cover all bases.I'm really looking forward to improving my own skill using it - like I said first timer here! I was scared for years that I'd do more harm than good but after my first time (and even a screw up or two!) it was nice to learn I COULD do it, and that I'll hopefully only get better with practice!Hasta el momento han funcionado muy bien, he podido empezar con esto del afilado
